Completo Italiano

The most famous Chilean version of perro caliente (hot dog) is perhaps the Completo Italiano: a classic Wiener sausage is topped with fresh tomato, delicious green sauce made of avocado and mayonnaise,  giving the red, green and white elements of the Italian flag. 

If you have leftover frankfurters from Sunday, that's a start (or pick up a pack of Hertas at the supermarket).  If you don't have hotdog rolls you may have bread of some kind.  Now get inventive... tomato and chilli salsa, or fresh tomato chopped with spring onions... whatever grabs you.  A nice ripe avocado and a dollop of Hellmans with maybe a squirt of lemon. There you go.

Wouldn't it be great to start with a Pisco Sour...

A definition:  Pisco Sour is a cocktail containing pisco, lemon or lime juice, egg whites, simple syrup, and regional bitters.

Assuming Pisco is not readily available, grab a bottle of the many excellent Chilean wines that are easy to find.  One to look out for is Concha y Toro Carmanere, quite distinct from the more common Cabernet Sauvignon.
